  • 2 Eggs
  • 1 ¾ cups Almond or Oat milk
  • 1 tsp Vanilla Essence
  • ½ cup Maple syrup
  • 2 cups Flour (self-raising)

Instructions

  1. In a mixing jug, whisk together the eggs, almond or oat milk, vanilla essence and maple syrup. Make sure all the ingredients are well combined.
  2. In a large bowl, sift the self-raising flour and create a well in the centre.
  3. Pour the milk mixture into the well of the flour. Whisk everything together until you get a smooth, lump-free batter.
  1. Now, it's time to cook these scrumptious pancakes. Heat a large non-stick frying pan or pancake pan over medium heat. You can use a little coconut oil or olive oil to grease the pan.
  2. Pour a portion of the batter onto the pan, depending on your preferred pancake size. Cook until bubbles start to appear on the surface, which should take about 1-2 minutes.
  1. Once you see those bubbles, it's time to flip the pancake. Cook the other side for an additional 1-2 minutes until it turns a lovely golden brown.
  2. Transfer the cooked pancake to a plate, and if you're making more, repeat the process with the remaining batter. Don't forget to grease the pan with oil between batches.
